Homemade Easter Candy...

Pineapple Easter Eggs!

1 egg white
1/2 cup crushed pineapple
1 cup chopped nuts
1 6oz pkg. chocolate chips
1-2 boxes powdered sugar

Drain and press all juice from the pineapple. Beat the egg white until stiff.
Add Sugar to make dough. add in pineapple and nuts, work together adding more sugar as needed. Shape into eggs.
Melt chocolate in double broiler (or your favorite method) dip eggs in or pour chocolate over eggs on wire rack.
lay on wax paper to cool.
When chocolate is hard decorate with cake decorator and your favorite stiff icing recipe, or decorator icing.
