Breakfast on the go...

In A hurry no time for breakfast..


Great for any one on the go.

Not much time in the morning? I hear you, completely understand...I remember those days in a hurry to get yourself together and out the door. I still have days like that but not as bad, thankfully...

With all the things we have to do get everyone moving and ready for their day it is easy to get sidetracked and stuck in a breakfast rut and make a bad food decision for breakfast.

By the time the kids are ready, the hubby together and make sure he has what he needs, you get yourself together and are ready for a nap! you don't want to cook. Some days it seems like your lucky to even get yourself dressed. lol 

I do not miss those days at all. 

Here is one of my recipes I keep on hand and make often! I prepare these and freeze them! they are great for fast breakfast and if everyone can use a microwave they can make their own breakfast in the morning. After all your day is busy enough.

No matter what the case may be, there truly is always time for a little something, so why not make it yummy and healthy...somewhat at least...better than a doughnut or junk food.

Breakfast Burrito

Make it how you and your family like it!

What you need
  • tortillas ( I use flour)
  • eggs
  • water
and what ever you like in your scrambled eggs...

We like to use
  • cheese, onions, sausage
  • cheese, onions, bacon
  • ham, and cheese
  • rice, tomato, avocado
  • cheese, onions, peppers
those are a few of our combinations. What I like best is you make what your family likes and they are ready to go whenever even for snacks.

to get started

 8 eggs and 1/4 to1/2 cup water depending on how you like your scrambled eggs (I do not use milk in this recipe) whisk till combined and add your Chopped up ingredients and stir.

Now just scramble it all together in a pan. When it is done scoop out onto the tortillas and roll them like a burrito. fold one edge over, then tuck in the top and bottom of the fold just made and roll. 

Wrap in plastic wrap and place in labeled zip lock freezer bag. this makes about 10 burritos. Lasts 1 month in freezer. ours are gone way before then!

When you want one pull it out take off the plastic wrap and microwave on high for 2 minutes.

Breakfast done!
