Chicken Bake

A one dish meal my family loves, and we are not big on chicken...

  • 4 chicken breasts cubed about 1 inch pieces
  • 1 can creamed soup (we use celery but any would be delicious we have tried many of them) plus the can of milk if using condensed soup mix together before assemble
  • 16 oz bag mixed veggies thawed
  • 1 cup shredded mozzarella cheese or cheddar both are yummy
  • 1 pkg. stuffing mix prepared or 6 servings homemade stuffing prepared
Preheat the oven to 350* F.

  1. in a 13 by 9 pan layer raw chicken, mixed veggies of choice, cream soup prepared, sprinkle the cheese and top with the stuffing.
  2. do not cover with foil, unless you made homemade stuffing, as it tends to be drier than store packs.
  3. leave it alone! do not stir after 40-50 minutes take it out of the oven
  4. Serve.
Do not worry the chicken is fully cooked no pink anywhere! I have made this many times and it will not dry out if you leave it for 50 minutes if you just want to make sure my sister even cooks it for a full hour, but really there is no need to, it is done at 40 minutes.

If you are like me and sometimes are in a hurry this is a great prep before, freeze in baggie, and throw in the crock pot in the morning and at dinner it is ready and waiting.

If you try it, I would love to hear your thoughts and families thoughts on it.
